You might want to add RTcmix (http://rtcmix.org) to the list of free, open-source music synthesis/sig-processing packages. We're a quiet bunch, but a fair number of people use it over here. Available for OSX/Linux/Windows (windows as rtcmix~ in max/msp).
My apologies for not speaking French, though. My daughter is fluent (she live in Nantes for 6 months), but I'm pathetic.

Codelab.fr is a new french speaking forum devoted to the experimental practices for creation of pictures, videos, sound and music by code (chuck, processing, supercollider, livecode, pure-data, gem, vvvv, etc) or electronic experimentation (interfaces and instruments, circuit-bending, etc.) The software and languages approached on the forum are open-source (except for vvvv which is free for a not-commercial use). It is a crossroads where users could meet and help themselves. Beginners are welcome, and will be able to find some advices and help to start creative code programming. A forum is also available to announce demonstrations, workshops, concerts, associations, etc for these practices.
If anyone interested : a Syntaxhighlighter brush file was made to highlight ChucK code in web context (javascript client-side way), feel free to ask!
