What interfaces (USB/Firewire) have people had good experiences with when doing 4+ channel audio? [Mac OS X]

Just a idea, but it might be worthwhile to consider the Edirol that PLORK uses; http://wiki.cs.princeton.edu/index.php/PLOrk_station Using the same hardware as PLORK would pretty much guarantee compatibility. Yours, Kas.
